I've flown the grand canyon 4 times now and never know quite he best route. Stole this from email thread with some pilot friends:
First, you want the special chart for that area. It's great if you can
get it on your EFB but if not, get the paper one.
Now if you look at the flight here:

Arnaud, if you scroll down, you'll see the google earth view showing
where you land on 19R and the taxi to Atlantic Avaition in McCaran
or another better view if you scroll down even more:

As to where to fly, this will give you an idea, but the chart does not
show you the magic waypoints and corridors that are only on the special
chart:

Long story short, get the GPS waypoints plugged in your EFB or plane
before you go, and that way you can draw lines between them when you fly
across the grand canyon in a few strategic places (they're pretty much
VFR corridors that you can only fly with GPS and those magic waypoints).
Oh, and if you're in Vegas, you must do dogfighting and acro in an extra 330 with
sky combat ace:

(fly to hendersen on your way out, taxi to them, do the flight, and go
home, or they can pick you up from your hotel in Vegas and bring you
back for the rest of the day there, which will be faster than flying
from McCaran :)

(if you do this, I recommend you do the first flight in the morning,
less wait and less bumpy)
Have fun!
